Almond Chicken and Asparagus Healthy Salad

 

 

Ingredients:

 

  • ¼ cup mayonnaise, low-calorie   
  • 2 cups asparagus tips, cut diagonally   
  • Fresh lettuce leaves   
  • ¼ tsp curry powder   
  • 1/8 tsp fresh ground pepper   
  • 2 cups boneless chicken breast, skinless, cooked and chopped   
  • 2 tbsp toasted and sliced almonds   
  • ½ cup red bell pepper, chopped and seeded   
  • ¼ cup yoghurt, plain and non-fat   
  • ¼ cup chopped cilantro   
  • 1 tsp lemon juice   
  • ¼ tsp salt   

 

Preparation:

 

  1. For about 2 minutes, steam the asparagus tips or until crisp-tender.   
  2. Combine in a medium bowl of low-calorie mayonnaise, curry powder, plain yoghurt and salt. Whisk the mixture together until creamy.   
  3. Add boneless chicken breast, fresh cilantro, steamed asparagus and toasted almonds and hurl to coat.   
  4. Dish up on fresh, chilled lettuce leaves.   

Makes 4 servings, this simple recipe is perfect for those who are trying to cut out on those calories and enjoy a healthy but tasteful dish. The recipe features a good source of protein and nutrients that would truly be beneficial to those people who are trying to watch their diet.
