Ingredients:
- 2 tsps margarine,
trans-fat-free
- 2 tbsp brown
sugar
- 1 pc whole apple, peeled, cored and
sliced
- 1 pc small acorn squash, around 6 inches in
diameter
Preparation:
- Combine together brown sugar and the apple in a
small bowl, then set aside.
- With the use of a sharp knife, pierce the acorn
squash many times to enable the steam to escape when cooking. For about 5 minutes, microwave on high
settings. To ascertain even cooking, turn the squash after 3 minutes.
- On a cutting board, cut the squash in halves.
Scrape off the seeds out of the core of each half and discard. The hollowed squash cores will be filled
with the apple-sugar mixture.
- Place the apple filled squash again into the
microwave and cook until the apples are softened. This will take about 2
minutes.
- On a serving dish, transfer the baked squash
and top with a teaspoon of margarine. Serve outright after cooking.
Acorn squash is an abundant source of essential nutrients
such as potassium, vitamins A and C and fiber as well. To make a hearty and healthy main dish, this recipe
pairs acorn squash with apples and brown sugar.
