Ingredients:
- 1/8 tsp freshly ground black
pepper
- 2 pc medium russet
potatoes
- 1 tbsp minced fresh
rosemary
- Butter-flavored cooking
spray
Preparation:
- Preheat the oven to
380ºF.
- Clean potatoes surfaces by washing thoroughly.
Pierce the surface of the fork several times on both sides then put in the oven and bake for an hour or
until the skins become crisp.
- Cut the potatoes into halves; take out the pulp
leaving about 1/8 inch of the potato flesh that is still intact with the skin. Save the pulp for some
other use. Be careful when doing this as the potatoes will be very hot.
- With the butter-flavored cooking spray, spray
the insides of each potato skin. Press in the pepper and the rosemary then again bake the skins in the
oven for 5 to 10 minutes. Serve while hot.
This recipe may also be used with any other herbs or spices
to season the potato skins. Fresh basil, garlic, chives, cayenne pepper, tarragon, thyme, dill and caraway
seed are some of the herbs that could go well with this recipe.
