Ingredients:
- 4 large chicken breasts
- Low fat oil
- 6 potatoes cut up and cooked lightly
- 120 grams of chicken stock
- 65 grams of pesto
- 2 red peppers chopped and diced.
- Salt and Pepper
Preparation:
- Coat the chicken breasts with low fat oil and add to a
hot frying pan. Add salt and pepper to add flavor and cook for 2 minutes on each side.
- Using a slow cooker, add the cooked potato slices to
the bottom, add in the chicken stock and add the pesto over the top.
- Add in the red pepper and toss the entire
mixture.
- Throw in the chicken breasts and cook for approximately
6 hours on a slow heat.
