Chicken, Potato, Pesto & Red Pepper

Ingredients:

  • 4 large chicken breasts 
  • Low fat oil 
  • 6 potatoes cut up and cooked lightly 
  • 120 grams of chicken stock  
  • 65 grams of pesto  
  • 2 red peppers chopped and diced. 
  • Salt and Pepper 

Preparation:

  1. Coat the chicken breasts with low fat oil and add to a hot frying pan. Add salt and pepper to add flavor and cook for 2 minutes on each side. 
  2. Using a slow cooker, add the cooked potato slices to the bottom, add in the chicken stock and add the pesto over the top. 
  3. Add in the red pepper and toss the entire mixture. 
  4. Throw in the chicken breasts and cook for approximately 6 hours on a slow heat.
