Ingredients:
- 1 egg, lightly
beaten
- ½ cup maple
syrup
- 1 banana, peeled and
mashed
- ½ cinnamon
stick
- ¼ cup fat free plain
yoghurt
- 3 whole cloves
- ¼ teaspoon ground
cinnamon
- 1 cup water
- ¼ tsp salt
- ½ cup old-fashioned rolled
oats
- ¼ tsp baking
soda
- 1 cup water
- 2 tbsp light brown
sugar
- 1 ½ tsp baking
soda
- 2 tbsp canola
oil
- ½ cup all purpose
flour
Preparation:
- Mix in the maple syrup, cloves and cinnamon
stick in a small saucepan. Cook under medium heat and bring to boil. Take away from heat and let cool for
about 15 minutes. With the use of a slotted spoon, take out cinnamon stick and cloves. Set the syrup
aside and keep warm
- Mix in the oats and water in a large
microwave-safe bowl and cook on high settings until the oats become creamy and tender. Mix in canola oil
and brown sugar. Set aside and let cool slightly.
- Mix in flour, baking soda, ground cinnamon salt
and flour in a bowl.
- Combine in yoghurt, milk and banana to the oat
mixture until evenly mixed. Beat in egg and mix in the flour mixture. Keep stirring until
moistened.
- Spoon a quarter cup of pancake batter into a
non stick frying pan under medium heat. Cook until both surfaces of the pancake are lightly
browned.
- Transfer cooked pancakes on serving plates.
Drizzle with warm syrup. Serve while hot.
The mashed bananas and cooked oats make these sumptuous
pancakes moist and delicious.
