Ingredients:
- 1 lb pork tenderloin, sliced into
quarters
- 2 tbsp sesame
seeds
- 1 tbsp sesame
oil
- 1/8 tsp cayenne
pepper
- 1/8 tsp cinnamon,
ground
- 1/8 tsp celery
seed
- ¼ tsp ground cumin,
ground
- ½ tsp onion,
minced
Preparation:
- Preheat oven to 400ºF. With a cooking spray,
coat a baking pan lightly.
- Combine the sesame seeds in a single layer in a
heavy frying pan. Cook the seeds on low heat with constant stirring until they appear golden brown
and produces a noticeable toasty smell. This will take about 1 to 2
minutes. Take off the toasted seeds from the pan. Cool.
- Add together cayenne pepper, minced onions,
cinnamon, toasted sesame seeds, coriander, celery seeds, cumin and sesame oil in a bowl. Mix evenly by
stirring.
- Put the pork tenderloin pieces in the prepared
baking pan. Pat the mixed spices on both surfaces of the pork cutlets. Bake for about 15 minutes or until
it is no longer pink in color.
- Serve immediately the pork tenderloin to warmed
plates.
This recipe is best served with brown rice, fresh mango and
slices of fresh papaya.
