Ingredients:
- 1 tbsp fresh
basil
- ½ cup chicken breast, chopped and
cooked
- ¼ cup Parmesan cheese,
grated
- 4 tsp olive
oil
- ¼ cup mozzarella cheese, grated,
low-fat
- 4 pc 6-8 inch flour
tortillas
- ½ cup fresh oregano,
minced
- ½ cup pizza
sauce
- ½ cup vegetables, roasted and
chopped
Preparation:
- Place the oven rack in about 4 to 5 inches
above the heating element.
- Preheat the
broiler.
- With ¼ teaspoon of oil, lightly brush each side
of the flour tortilla. Coat both sides.
- On both sides of the flour tortilla, prick the
surface in several parts with the use of a fork.
- Put the flour tortillas directly on the oven
rack and cook for about 1 to 2 minutes on each side or until both sides are lightly browned. Carefully
watch the whole procedure as over cooking is avoided.
- Transfer the cooked tortillas into a baking
sheet and spread each with pizza sauce.
- Top each tortilla with chicken and vegetable
then sprinkle with cheeses and oregano.
- Broil stuffed tortilla for about 1-2 minutes or
until the cheeses are melted.
- Top with
basil.
