Ingredients:
- 1 big tomato,
chopped
- 1 lb beef sirloin, about ¾” in
width
- 6 cups lettuce leaves,
shredded,
- 1 ½ tbsp chili
powder
- 1 tbsp prepared
horseradish
- 2 tsp dried
oregano
- 1 cup sour cream,
non-fat
- 1 tsp ground
cumin
- ½ big red onion,
chopped
- 6 pc flour tortillas, 6-8 inches in
diameter
Preparation:
- In an oven, preheat broiler and set rack 4
inches below the heating elements.
- Slice off the fat portions from the beef. Mix
in oregano, chili powder and cumin in a small bowl. On both sides of the beef, rub in the spices mixture.
Let the beef stand for 20 minutes at ambient temperature.
- Transfer beef on a broiler pan and cook in the
oven for 3 to 5 minutes or until medium done (or until preferred).
- On a cutting board, slice the beef into 1/8
inch slices.
- Lightly heat the tortillas according to
directions found in the package.
- Mix in horseradish and sour cream in a small
bowl then spread about 3 tbsp of the prepared mixture over each
tortilla.
- With a cup of lettuce leaves, top each of the
tortilla then sprinkle with the tomatoes and chopped red onions.
- Subdivide beef slices into equal parts and top
each tortilla with beef cuttings.
- Fold one side of the tortilla to around an inch
over filling. Fold the left and right portions over the folded side overlapping. Serve
immediately.
